Grilled Gressingham Duck With Cherry Sauce

  1. Preheat the grill to medium hot.
  2. Spray a grill rack with oil.
  3. Season the duck breasts and grill for 6-8 minutes on each side, or until cooked to your liking.
  4. While the duck is cooking, make the sauce.
  5. Spray a large, non-stick frying pan with oil and place over a medium heat.
  6. Add the red onions and cherries and stir-fry for 5-6 minutes.
  7. Add the remaining sauce ingredients and cook for another 10-12 minutes.
  8. To serve, slice the duck breasts and place on 4 warmed plates.
  9. Spoon over the cherry sauce and serve with a green leaf salad, if desired.
