Mango Bread (Lower Cal)
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 12 teaspoon baking powder
- 1 teaspoon cinnamon
- 6 tablespoons egg substitute
- 6 tablespoons Smart Balance light butter spread
- 34 cup granulated sugar
- 1 cup fresh mango, peeled and diced
- Preheat oven to 350F.
- Grease and flour 9x5 inch loaf pans.
- Sift the flour, baking soda, baking powder and cinnamon into a small bowl.
- In a large mixing bowl, combine eggs, smart balance, and sugar and mix with dry ingredients until well blended.
- Fold in mango and then pour into loaf pans
- Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Let cool 10 to 15 minutes, unmold and let completely cool on baking racks.
