Chicken Mole

  1. Arrange chicken in a large pot.
  2. Add stock, and cook until tender but not falling apart, 1 to 1 1/2 hours.
  3. Lift chicken out of stock and cool slightly.
  4. Reserve stock.
  5. Process tortillas, raisins, chocolate, almonds, onion, bell pepper, tomato, and garlic in a food processor or blender until finely ground.
  6. Add enough stock to make a thick gravy-like sauce.
  7. Add crushed chile and cinnamon.
  8. Pour sauce into a large pot.
  9. Add chicken pieces and simmer 30 minutes.
  10. If mixture becomes too dry, add more stock.
  11. Serve hot with rice.
