Szechuan Scallops With Sweet Peppers Recipe

  1. Remove seeds and slice bell peppers into 1-inch squares.
  2. Peel onion, and cut into 1-inch cubes.
  3. Separate onions into leaves.
  4. Place ingredients near wok or possibly stove or possibly electric frying pan.
  5. Spray with cooking spray.
  6. Combine all ingredients in skillet except scallops.
  7. Cover and simmer for 5 min.
  8. Uncover and simmer till sauce thickens, about 4 more min.
  9. Stir in scallops, and heat just till heated through and coated with sauce.
  10. Serves 2-3.
