Couscous with Scallions and Parsley

  1. In a medium saucepan, combine the water with the butter and salt and bring to a boil.
  2. Add the couscous, cover and remove from the heat.
  3. Let stand 5 minutes.
  4. Using a fork, fluff the couscous.
  5. Add the scallions and parsley and serve.
