Elbows With Scallion and Herb Butter
- 2 cups elbow macaroni
- 4 tablespoons butter
- 1 garlic clove, crushed
- 1 pinch dried oregano
- 1 pinch dried tarragon
- 14 cup thinly sliced scallion
- 1 tablespoon minced parsley
- Cook pasta in plenty of boiling salted water, about 12 minutes.
- Drain.
- Meanwhile, melt butter in a small skillet.
- Stir in garlic, oregano, tarragon; saute 1 minute.
- Off heat stir in scallion and parsley.
- Add the cooked pasta.
- Toss and serve.
