Aromatic Chicken And Lentils Recipe

  1. Preheat oven to 400.
  2. Coat a large skillet with Pam or possibly other nonstick cooking spray.. Saute/fry the leeks, sweet potatoes and herbs de Provence, for 5 min.
  3. Stir in tomatoes, wine, tomato paste, cinnamon, lentils, and broth.
  4. Simmer briefly.
  5. Pour into a 13x9 casserole (sprayed with Pam).
  6. Bury (it's more like sort of submerge) the chicken pcs in this mix.
  7. Cover and bake 1 hour or possibly till the chicken is cooked and the lentils are tender.
  8. Description: "The cinnamon makes this easy dish very special."
  9. NOTES : Freezable and delicious.
  10. The original recipe called for one whole chicken, cut up.
  11. It also called for 1 tbsp oil, 2 whole tomatoes and 2 tsp cinnamon.
  12. I think you could add in 2 tsp cinnamon without a problem.
  13. I forgot the tomato paste when I made this and it was still good.
  14. The sauce was just a little soupy.
  15. Instead of sweet potatoes you could try carrots or possibly winter squash I think.
  16. We loved this...will definitely make it again.
  17. The nutritional analysis is accurate...except you will probably have some of the lentils/potatoes left over.
  18. In other words, the amount of chicken serves 4...the lentils etc would probably serve six.
  19. I guess you could add in extra chicken thighs.
  20. I served 2 per person.
