Brigitte's Mincemeat Cookies
- 1 cup vegetable shortening
- 1 1/2 cups sugar
- 3 large eggs
- 3 cups flour, all-purpose
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 113 cups mincemeat filling
- Cream shortening.
- Add sugar, and blend well.
- Add eggs, and beat until smooth.
- Add mixed dry ingredients and then stir in mincemeat.
- Blend well.
- Drop by teaspoonful onto a greased cookie sheet, at least 2 inches apart.
- Bake at 400F (200C) for 12 minutes or until lightly browned.
