Grilled Steak with Roasted Tomatoes and Blue Cheese

  1. To prepare marinade, combine olive oil, vinegar, garlic, herbes and salt in a ziplock bag.
  2. Add steak and marinate for 2 hours.
  3. Preheat oven to 400 degrees F. On a foil-lined baking sheet, lay out tomatoes in a single layer.
  4. Drizzle olive oil over tomatoes.
  5. Sprinkle garlic, salt and pepper over olive oil.
  6. Roast in oven for 20 minutes.
  7. While tomatoes are in the oven, pre heat a grill.
  8. Remove steak from marinade, discard marinade.
  9. Grill steak for about 5-6 minutes each side depending on desired degree of doneness and thickness of your steak.
  10. Let rest for about 10 minutes.
  11. Top steak with tomatoes and blue cheese crumbles.
