Grilled Steak with Roasted Tomatoes and Blue Cheese
- 1/4 cups Olive Oil
- 2 Tablespoons Balsalmic Vinegar
- 2 cloves Garlic, Minced
- 2 teaspoons Herbes De Provence
- 1 pinch Salt
- 2 pounds Sirloin Steak
- 2 Tablespoons Blue Cheese, Crumbled
- 1 pint Cherry Tomatoes
- 2 Tablespoons Olive Oil
- 2 cloves Garlic, Minced
- 1 pinch Salt
- 1 dash Pepper
- To prepare marinade, combine olive oil, vinegar, garlic, herbes and salt in a ziplock bag.
- Add steak and marinate for 2 hours.
- Preheat oven to 400 degrees F. On a foil-lined baking sheet, lay out tomatoes in a single layer.
- Drizzle olive oil over tomatoes.
- Sprinkle garlic, salt and pepper over olive oil.
- Roast in oven for 20 minutes.
- While tomatoes are in the oven, pre heat a grill.
- Remove steak from marinade, discard marinade.
- Grill steak for about 5-6 minutes each side depending on desired degree of doneness and thickness of your steak.
- Let rest for about 10 minutes.
- Top steak with tomatoes and blue cheese crumbles.
