Egg Strata

  1. Cook and stir onions, zucchini and red or green pepper in margarine or butter in skillet over medium-high heat for 4 to 6 minutes or until tender.
  2. Set aside.
  3. Mix bread cubes and cooked vegetables in greased 8 x 8 x 2-inch baking dish.
  4. Top with cheese.
  5. Mix egg substitute and milk in small bowl; pour over bread mixture.
  6. Bake at 375F for 45 to 50 minutes or until browned and knife inserted in the center comes out clean.
  7. Garnish as desired.
