Curried Chutney Chicken Salad
- 5 c. cooked chicken
- 1 c. green grapes
- 1/2 pineapple
- 13 c. mango chutney
- 1 tsp. curry powder
- 1 c. mayonnaise
- 1 tbsp. lime zest
- 1/4 c. lime juice
- 1/2 tsp. salt
- salad greens
- 1/2 c. pecans
- 1/2 c. green onions
- In a large bowl, combine the chicken with the grapes and pineapple.
- In a large bowl, combine the chicken with the grapes and pineapple.
- To make the dressing: In a separate bowl, whisk together the chutney, curry powder, mayonnaise, lime zest, lime juice and salt.
- Pour over the chicken mixture; toss gently but thoroughly.
- At this point, you can refrigerate the salad for up to 3 hours, or turn it out onto a platter lined with greens, chill briefly and serve, topped with pecans and green onions.
- (The dressing gets runny if made more than 3 hours in advance.)
