White Bean Turkey Chili

  1. Place white beans in large bowl.
  2. Add enough cold water to cover by at least 3 inches; let stand overnight.
  3. Drain and rinse beans.
  4. Heat oil in heavy Dutch oven over medium heat.
  5. Add chopped onions and saute 5 minutes.
  6. Add diced chilies, minced garlic, oregano, cumin, and chili powder; saute 5 minutes.
  7. Add beans, chicken broth, chopped tomatillos, and cilantro.
  8. Bring bean mixture to boil.
  9. Cut turkey breast in half crosswise and add to bean mixture.
  10. Simmer until turkey is just cooked through (about 20 minutes).
  11. Transfer turkey to a plate, cover with foil and refrigerate.
  12. Simmer chili until beans are tender, about 2 hours.
  13. Cut turkey into 1/2 inch pieces.
  14. Add turkey, green onions, and lime juice to chili and stir.
  15. Simmer for 30 minutes.
  16. Season with salt and pepper.
  17. Top each serving with chopped fresh cilantro and cheddar cheese.
