Peanut Butter Bars
- 1 cup brown sugar
- 3/4 cup all purpose flour
- 1/4 cup toasted wheat germ
- 4 teaspoon ground cinnamon
- 3/4 teaspoon baking soda
- 3-1/2 cup oats, quick or old-fashioned (uncooked)
- 1/3 cup applesauce
- 3 tablespoon canola oil
- 1 cup creamy peanut butter
- 1-1/4 cup cholesterol-free egg product (or packaged egg whites)
- 2 ounce fat-free milk
- 4 teaspoon
- 3/4 cup raisins
- Preheat oven to 350 degrees F.
- Spray 9" x 9" pan with vegetable oil spray.
- Blend brown sugar, flour, wheat germ, cinnamon, baking soda and dry oats in a large mixing bowl.
- Add applesauce, oil, peanut butter, egg substitute, milk and vanilla.
- Mix by hand or with electric mix until well blended.
- Stir in raisins.
- Spread mixture evenly in bottom of pan.
- Bake for 30 to 40 minutes, or until knife inserted in the center comes out clean.
- Cut into 15 even pieces and one piece is one serving.
- The rest freeze well for future breakfasts.
