Hobo

  1. In a large skillet over medium-high heat, brown the sausage.
  2. If desired, drain the fat.
  3. Add the onions and mushrooms and cook until tender, then set aside in a separate bowl.
  4. In the same skillet, add the oil and hash browns over medium-high heat and cook until golden brown on 1 side.
  5. Once golden brown, add the eggs, sausage and the mushroom mixture.
  6. Scramble together until desired consistency and top with the Cheddar.
  7. Cover with a lid until the cheese melts and serve.
