Grilled Calamari Salad

  1. Put 1 cup of the herb oil in a mixing bowl.
  2. Add calamari, cover and marinate in the refrigerator for 24 hours.
  3. Preheat a grill to high heat.
  4. Remove calamari, season with salt and pepper on both sides and grill for approximately 4 minutes per side.
  5. While the calamari is cooking, put all other ingredients and the remaining 1 cup herb oil in a mixing bowl.
  6. Slice calamari into thin juliennes, and add to all of the ingredients.
  7. Mix thoroughly, season with salt and pepper.
  8. 1/4 cup chopped parsley leaves
  9. 1/4 cup chopped chervil leaves
  10. 1/4 cup chopped basil leaves
  11. 1/4 cup chopped thyme leaves
  12. 1 quart blended olive oil
  13. Combine all ingredients.
  14. This can be prepared in advance and used for multiple recipes.
  15. Yield: 1 1/2 quarts
