Sweet Corn Casserole
- 1 can creamy corn
- 4 can sweet corn (drained)
- 1 1/2 cup milk
- 2 eggs
- 3/4 cup granulated sugar
- 1/2 cup milk
- 2 packages yellow corn bread mix
- 1/2 cup heavy cream
- 1/2 packages soft cream cheese
- 2 tbsp granulated sugar
- 1 salt & pepper
- 1 stick butter (cubed)
- 1 cup shredded colby jack cheese
- 1 tsp dried parsley
- Preheat oven to 400.
- In a cake pan add creamy corn, corn, butter, 1/2 cup of milk, heavy cream, softened cream cheese, 2 tbsp of sugar, salt & pepper.
- Mix all ingredients well.
- In a bowl, add 2 pkgs yellow corn bread mix, 1 1/2 cup of milk, eggs, 3/4 cup of sugar.
- Mix with hand mixer.
- When well mixed add cup of cheese and mix about ten to fifteen seconds.
- Pour mix over the corn mixture.
- Top with parsley.
- Bake for about 35-40 minutes or until corn bread is golden brown.
