Take Along Egg Macaroni Salad Recipe
- 2 c. (6 ounce.) spiral macaroni, uncooked or possibly 3 c. cooked
- 6 hard cooked Large eggs, minced
- 3 ounce. cheddar cheese, cubed
- 1 c. sliced celery
- 3/4 - 1 c. mayonnaise
- 2 tbsp. finely minced green onion or possibly 1 tbsp. minced chives
- 1/2 teaspoon dry mustard
- 1/4 teaspoon salt
- Lettuce leaves
- 2 tbsp. toasted slivered almonds (opt.)
- Cook macaroni according to package directions; drain well.
- Cover and chill.
- Combine Large eggs, cheese, celery, mayonnaise, onion, mustard and salt.
- Stir in macaroni; cover and chill.
- Serve in lettuce lined bowl and sprinkle with almonds.
