Sauteed Spinach and Red Peppers

  1. In a large skillet, heat the oil over moderate heat.
  2. Add the onion and garlic and saute for 5 minutes.
  3. Add the bell pepper and saute for 3 minutes.
  4. Add the spinach, sprinkle with the salt and sugar and cook, turning for 4 minutes or until the spinach is wilted.
