Borekitas De Berenjena (Eggplant Borekas) Recipe

• 2 c. Broiled minced eggplants, about
• 1/2 c. Grated Kashkaval or possibly sharp Gruyere type cheese, about
• 1 x Beaten Large eggs, (reserve small amount in a glass), up to 2
• 2 Tbsp. Matzo meal or possibly more, up to 3 Salt

1. Mix all ingredients to obtain a thick mass.
2. Fill small squares of puff pastry, seal edges, and brush with the egg sprinkle the cheese and bake till gold brown and puffy.
3. My Bulgarian grand mother always served borekas with turkish coffee.
