Carrot Almond Cake

  1. Heat oven to 350.
  2. Grease a 9-inch cake pan.
  3. Combine pureed carrots with egg yolks and glycerin.
  4. Mix in ground almonds, orange zest, salt and cardamom.
  5. Beat egg whites until stiff and fold into carrot mixture.
  6. Spread in pan.
  7. Bake until springy, about 45 minutes.
  8. Cool.
  9. Frost with cream cheese frosting if desired.
