Stuffed Yam Croquettes
- 12 cup dried onion
- 8 ounces canned ham
- 8 ounces canned chicken
- 18 cup butter
- 8 ounces monterey jack cheese
- 2 teaspoons pepper, divided
- 3 (16 ounce) cans candied yams, drained
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 3 eggs
- 14 cup milk
- 1 cup flour
- 1 12 cups corn flakes, crushed
- vegetable oil (for frying)
- soak dried onions in hot water for 10 minutes.
- Drain.
- Saute onions with ham and chicken in the butter until nicely browned.
- Mix in cheese and 1 teaspoon pepper.
- Set aside.
- Puree or mash yams until smooth.
- Mix in garlic powder, salt and pepper.
- Combine yams with meat mixture.
- Divide into 20 balls.
- Beat eggs and milk together to make a wash.
- Dredge each ball through the flour, shaking off excess.
- Dip into egg wash and then roll in cornflakes.
- Deep fry for 7 minutes at 350.
