Stuffed Yam Croquettes

  1. soak dried onions in hot water for 10 minutes.
  2. Drain.
  3. Saute onions with ham and chicken in the butter until nicely browned.
  4. Mix in cheese and 1 teaspoon pepper.
  5. Set aside.
  6. Puree or mash yams until smooth.
  7. Mix in garlic powder, salt and pepper.
  8. Combine yams with meat mixture.
  9. Divide into 20 balls.
  10. Beat eggs and milk together to make a wash.
  11. Dredge each ball through the flour, shaking off excess.
  12. Dip into egg wash and then roll in cornflakes.
  13. Deep fry for 7 minutes at 350.
