Bruschetta Stuffed Mushrooms

  1. Preheat oven to 400 degrees.

  3. Clean mushrooms and remove the stems, leaving a little bowl for your stuffing.

  5. Crush croutons and drain tomatoes but not too throughlyleave a bit of the juice.
  6. In a bowl, combine crushed croutons, drained tomatoes, basil, and cheese.
  7. Using a fork, mix until ingredients are combined.
  8. Let this sit for a few minutes so the croutons absorb any juices from the tomatoes.

  10. Place mushrooms on a baking sheet.
  11. Fill each with approximately 1 tablespoon of filling.
  12. 4.
  13. Place in the 400-degree oven and bake for 15 minutes.
  14. Enjoy!
