Spicy Dan Dan Noodles
- 3 cups 25%-less-sodium chicken broth
- 1 cup water
- 1/4 cup Kraft Smooth Peanut Butter
- 2 Tbsp. reduced-sodium soy sauce
- 2 tsp. chili oil
- 2 tsp. sesame oil
- 2 tsp. ground Sichuan peppercorns
- 1 Tbsp. vegetable oil
- 1 carrot, cut into thin matchlike sticks Target 2 lb For $3.00 thru 02/06
- 1 stalk celery, cut diagonally into thin slices
- 1 small yellow pepper, cut into thin strips
- 1/2 lb. (225 g) thin wheat noodles, uncooked
- 2 sprigs fresh coriander (cilantro)
- Mix first 7 ingredients in saucepan; bring to boil.
- Simmer on medium-low heat 5 min.
- Remove from heat; cover to keep warm.
- Heat oil in wok on medium-high heat.
- Add carrots, celery and peppers; stir-fry 2 min.
- Remove from heat; cover to keep warm.
- Cook noodles as directed on package; drain.
- Place noodles in large serving bowl.
- Ladle broth mixture over noodles; top with vegetables and coriander.
