Italian Chicken Simmer

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add chicken; cook 10 min.
  3. or until lightly browned on both sides, turning occasionally.
  4. Add tomatoes and tomato paste; mix well.
  5. Stir in peppers; cover.
  6. Simmer on medium-low heat 20 min.
  7. or until chicken is done (170F), stirring occasionally.
  8. Remove from heat.
  9. Stir in Parmesan.
  10. Sprinkle with shredded cheese; let stand 5 min.
  11. or until melted.
  12. Serve with rice.
