Bunuelos Criollos Recipe
- 1 lb yuca peeled, large diced
- 1/2 lb boniato peeled, large diced
- 1/2 lb malanga peeled, large diced
- 1/4 lb calabaza peeled, large diced
- 3 x Large eggs
- 1 tsp salt
- 1/2 tsp star anise grnd
- 1/2 c. all-purpose flour - (to 1 1/2)
- 1/2 c. canola oil for frying
- 2 c. sugar
- 4 c. water
- 3 x cinnamon sticks
- 3 piece star anise
- 1 x lemon zested
- Boil all the vegetables till soft.
- Drain and press through a food mill into a food mixer bowl, cold to room temperature.
- With the paddle attachment, incorporate the Large eggs, salt and anise.
- Stir while adding sufficient flour to create a dough which can be molded.
- Roll dough into a rod and divide into 6-inch pcs.
- Form figure eights from the pcs, and deep fry till golden.
- Serve drizzled with Canela Syrup.
- Canela Syrup: Combine all the ingredients for the syrup in a sauce pan.
- Bring to a boil.
- Reduce the heat to low and let simmer, uncovered, till the mix is the consistency of syrup, about 30 min.
- This recipe yields 8 servings.
