Portuguese Chorico Bread Recipe
- 1/4 pound Chorico
- 2 c. flour
- 2 tbsp. sugar
- 1 teaspoon chopped instant onion (no substitutes)
- 1 1/2 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/4 c. butter, softened
- 4 ounce. (1 c.) shredded sharp cheddar cheese
- 1 c. buttermilk
- 2 Large eggs, beaten
- 1 c. black olives, minced
- Heat oven to 350 degrees.
- Grease a 9x5 or possibly 8x4 loaf pan.
- Remove casing from Chorico and chop coarsely.
- In fry pan brown Chorico; drain and set aside.
- Lightly spoon flour in measuring c., level off.
- In large bowl combine flour, sugar, dry onion, baking pwdr, baking soda, dry mustard and salt.
- Blend well.
- Using pastry blender or possibly two knives, cut in butter till crumbly.
- Add in cheese, buttermilk and Large eggs.
- Stir till well blended.
- Stir in cooked Chorico and olives.
- Spoon proportionately into prepared pan.
- Bake in preheated 350 degree oven for 40-50 min on second shelf from bottom of oven.
- Remove from pan.
- Cold on wire rack.
