New York-Style Cheesecake

  1. Heat oven to 325F.
  2. Combine all crust ingredients in bowl.
  3. Press onto bottom and 1-inch up sides of ungreased 9-inch springform pan.
  4. Bake 10-12 minutes or until golden brown.
  5. Cool.
  6. Combine cream cheese and sugar in bowl.
  7. Beat at medium speed, scraping bowl often, until creamy.
  8. Gradually add 1 egg at a time, beating well after each addition.
  9. Add 1/2 cup sour cream and 2 teaspoons vanilla.
  10. Beat at low speed until well mixed.
  11. Pour cream cheese mixture into baked crust.
  12. Bake 80-95 minutes or until set 2 inches from edge of pan.
  13. Combine remaining sour cream, 2 tablespoons sugar and 1 teaspoon vanilla in bowl.
  14. Evenly spread over top of hot cheesecake.
  15. Continue baking 7 minutes.
  16. Loosen sides of cheesecake from pan by running knife around inside of pan; remove sides of pan.
  17. Cool 2 hours or until completely cooled.
  18. Store refrigerated.
  19. Variation:
  20. Chocolate Cheesecake: Add 1 1/2 cups real milk chocolate chips, melted and cooled, to cheesecake with sour cream and vanilla.
  21. Bake as directed above.
