Pina Colada Pie
- 3 egg whites, at room temperature
- 1 cup sugar
- 1 cup finely chopped pecans
- 1 teaspoon vanilla
- 12 teaspoon cream of tartar
- 18 finely ground saltine crackers
- 12 cup whipping cream
- 12 cup shredded coconut
- 3 tablespoons pineapple preserves
- Beat egg whites until foamy.
- Add cream of tartar.
- Beat until egg whites are stiff.
- Add sugar gradually, beating until sugar disolves.
- Fold in crackers and pecans.
- Add vanilla.
- Lightly grease pie dish.
- Shape mixture into dish.
- Bake at 325 for 30-35 minutes
- Cool to room temperature before adding filling.
- Whip cream until thick and loses its shine.
- Fold in preserves.
- Sprinkle with Coconut.
- Refridgerate overnight before serving.
