Pina Colada Pie

  1. Beat egg whites until foamy.
  2. Add cream of tartar.
  3. Beat until egg whites are stiff.
  4. Add sugar gradually, beating until sugar disolves.
  5. Fold in crackers and pecans.
  6. Add vanilla.
  7. Lightly grease pie dish.
  8. Shape mixture into dish.
  9. Bake at 325 for 30-35 minutes
  10. Cool to room temperature before adding filling.
  11. Whip cream until thick and loses its shine.
  12. Fold in preserves.
  13. Sprinkle with Coconut.
  14. Refridgerate overnight before serving.
