Pears in Beaujolais
- 6 Anjou pears
- 1 bottle Beaujolais
- 3 quarter cup brown sugar
- 1 orange (zest only)
- 1 cinnamon stick
- 1 vanilla bean
- 6 peppercorns
- 2 cloves
- 1 star anise
- Peel the pears leaving the stems intact.
- Combine wine, sugar, vanilla bean and star anis, cinnamon stick and vanilla bean in stainless steel saucepan.
- Tie the peppercorn and cloves in a small square of cheesecloth and add.
- Bring to boil and let boil for 5 minutes.
- Place the pears in the wine and gently simmer for 20 minutes.
- Turn frequently.
- Remove from heat and let the pears cool in the wine
- Arrange in a serving dish and pour the sauce over the pears.
