Pears in Beaujolais

  1. Peel the pears leaving the stems intact.
  2. Combine wine, sugar, vanilla bean and star anis, cinnamon stick and vanilla bean in stainless steel saucepan.
  3. Tie the peppercorn and cloves in a small square of cheesecloth and add.
  4. Bring to boil and let boil for 5 minutes.
  5. Place the pears in the wine and gently simmer for 20 minutes.
  6. Turn frequently.
  7. Remove from heat and let the pears cool in the wine
  8. Arrange in a serving dish and pour the sauce over the pears.
