Cheese Straws

  1. Pre-Heat an oven to 190c / 170c fan.
  2. Put the flour, pepper, and butter in a bowl and rub together to make breadcrumbs.
  3. Add the cheese and mix in.
  4. Crack one egg in to the bowl, then separate the other egg, placing the whites to one side and the yolk in the bowl.
  5. Add the mustard and mix together.
  6. Once the mixture binds, knead for approx.
  7. 30secs.
  8. Wrap in clingfilm and rest in the fridge for a couple of hours.
  9. Roll out to approx.
  10. 0.5 - 0.75mm thickness, slice into fingers, give them a gentle twist and place on a baking tray.
  11. Beat the egg white and wash the fingers with it.
  12. Sprinkle over the sesame seeds and place in the oven for 18 - 20mins, until golden brown.
  13. Once cooked, remove and allow to cool.
