Cheese Straws
- 200 grams Self Raising Flour
- 1 pinch Ceyenne Pepper
- 125 grams Unsalted Butter
- 125 grams Parmessan (or vegetarian alternative)
- 2 Eggs
- 1 tsp Dijon Mustard
- 1 Sesame Seeds to sprinkle on top
- Pre-Heat an oven to 190c / 170c fan.
- Put the flour, pepper, and butter in a bowl and rub together to make breadcrumbs.
- Add the cheese and mix in.
- Crack one egg in to the bowl, then separate the other egg, placing the whites to one side and the yolk in the bowl.
- Add the mustard and mix together.
- Once the mixture binds, knead for approx.
- 30secs.
- Wrap in clingfilm and rest in the fridge for a couple of hours.
- Roll out to approx.
- 0.5 - 0.75mm thickness, slice into fingers, give them a gentle twist and place on a baking tray.
- Beat the egg white and wash the fingers with it.
- Sprinkle over the sesame seeds and place in the oven for 18 - 20mins, until golden brown.
- Once cooked, remove and allow to cool.
