Borscht Soup Recipe
- 12 cans beef consomme, undiluted
- 2 tbsp. fresh dill
- 1/2 c. wine vinegar
- 1 tbsp. sugar
- 2 tbsp. butter
- 2 c. onions
- 2 c. celery
- 2 c. carrots
- 2 c. white cabbage
- 3 c. beets, liquid removed (bite size)
- 1 c. diced tomatoes
- Simmer all vegetables in butter for 15 min.
- Add in sugar, stir.
- Add in vinegar, then beef consomme.
- Allow to cook on medium heat for 30 min, then add in dill.
- Serve warm with 1 tsp.
- lowfat sour cream to each bowl.
