Barbecue Stew (Not Brunswick Stew) Recipe
- 1/3 lb Smoked pork (butt or possibly shoulder), smoked Minced
- 1 med Onion, minced
- 1 quart Tomatoes, canned
- 2 Tbsp. Worcestershire sauce
- 1 c. Catsup
- 1 Tbsp. Texas Pete Warm Sauce
- 1 x Bay leaf
- 3 Tbsp. Bottled chili sauce
- 1/4 tsp Dry mustard
- 1 dsh Cayenne pepper
- 2 Tbsp. Vinegar
- 1 sm Can butter beans
- 1 sm Can corn
- 3 med Potatoes, diced
- 1 quart Water
- 2 Tbsp. BBQ Sauce
- 1 Tbsp. Soy sauce
- Put every thing except the beans and corn In a large pot.
- Simmer(don't boil) for 2 1/2 hour stirring occasionally till the potatoes are nearly done add in vinegar and vegetables.
- Simmer till potatoes are done.
- Remove Bay leaf before serving.
- Serving Ideas : Serve with crackers and corn bread as meal.
- NOTES : Potatoes become grainy if frzn.
- If you wish to freeze, only add in potatoes to the portion for this meal.
