Braised Cod With Shiitake Mushrooms Recipe
- Extra virgin olive oil cooking spray as needed
- 1 tsp extra virgin olive oil
- 1 lb shiitake mushrooms stems removed
- 2 lrg shallots peeled, chopped
- 2 x garlic cloves peeled, chopped
- 1 Tbsp. fresh thyme leaves (or possibly 1 tspn dry thyme)
- 3 Tbsp. balsamic vinegar
- 4 x center-cut cod fillets - (4 ounce ea)
- 1/8 tsp kosher salt optional Freshly-grnd black pepper to taste
- Heat a large non-stick skillet over medium high heat.
- Coat with cooking spray and extra virgin olive oil.
- Add in the mushrooms and cook, stirring till softened and liquid has evaporated.
- Add in the shallot, garlic, thyme, and 2 Tbsp.
- vinegar.
- Cook 2 min, stirring.
- Push the vegetables to the side of the skillet and add in the cod filets.
- Sear on both sides to brown, adding additional cooking spray to prevent sticking.
- Cover and cook over medium heat for 8 min, till the fish flakes with a fork.
- To serve, transfer to a serving plate.
- Top with mushrooms and sprinkle with remaining Tbsp.
- of vinegar, salt (if using), and pepper to taste.
- Serve immediately.
- This recipe yields 4 servings.
