For Osechi Matsukazeyaki Japanese-Style Meat Loaf
- 300 grams Chicken thigh mince
- 1 1/2 tbsp Soy sauce
- 2 tbsp Sake
- 1 tbsp Sugar
- 1 tsp Red miso
- 1/2 Egg
- 1/2 tbsp Katakuriko
- 1/2 tbsp Cake flour
- 1 Mirin
- 1 Poppy seeds
- 1 Oil
- Combine the ground meat and the ingredients in a bowl.
- Add half of the meat to a frying pan, cook until browned, then blend in the food processor.
- Mix the rest of the mince mixture with the cooked mince from Step 1 and ingredients, then pack it tightly into a tray that's been greased with a thin layer of oil.
- Even out the surface.
- Bake the meat loaf in an oven at 180C for 15 minutes.
- Take the tray out of the oven, brush some mirin over the top of the meat and sprinkle over some poppy seeds.
- Bake the meat loaf for a further 5-6 minutes.
- Once the meat loaf has cooled, remove it from the tray, and cut it into fan shapes if you plan to use it for osechi.
- If not, slice it into whatever size you like.
