Dragos-Style Charbroiled Oysters

  1. Start your outdoor grill (though a broiler would probably work well for this too).
  2. Shuck oysters (check for any broken shell pieces or visible sand) and arrange in a single layer on a pan.
  3. Melt butter, garlic, and pepper in a medium saucepan.
  4. Combine cheeses in a small bowl.
  5. Spoon butter mixture over each oyster, then give a generous sprinkle of cheese to each.
  6. Top with pinch of parsley.
  7. Carefully place each oyster on the grill so you dont lose any of the goodness you just decorated them with.
  8. Grill for about 6-8 minutes, or until theyre bubbly and the oysters begin to curl on the edges.
