Dragos-Style Charbroiled Oysters
- 32 whole Fresh Oysters
- 4 cloves Finely Chopped Garlic
- Plenty Of Freshly Ground Pepper
- 1/2 cups Good Quality Grated Parmesan Cheese
- 1/2 cups Grated Pecorino Romano Cheese
- 1 cup Unsalted Butter
- 1/4 cups Chopped Fresh Parsley
- Start your outdoor grill (though a broiler would probably work well for this too).
- Shuck oysters (check for any broken shell pieces or visible sand) and arrange in a single layer on a pan.
- Melt butter, garlic, and pepper in a medium saucepan.
- Combine cheeses in a small bowl.
- Spoon butter mixture over each oyster, then give a generous sprinkle of cheese to each.
- Top with pinch of parsley.
- Carefully place each oyster on the grill so you dont lose any of the goodness you just decorated them with.
- Grill for about 6-8 minutes, or until theyre bubbly and the oysters begin to curl on the edges.
