Christmas Taco Casserole
- 1- 1/2 pound Ground Beef
- 2 teaspoons Chili Powder
- 2 teaspoons Dried Parsley
- 1- 1/2 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Onion Salt
- 1/2 teaspoons Oregano
- 1/2 teaspoons Garlic Powder
- 3/4 cups Water
- 1 can Diced Tomatoes (15 Oz.)
- 1 whole Green Bell Pepper, Diced
- 3 cups Tortilla Chips
- 1 cup Shredded Colby-jack Cheese
- 1/2 cups Fresh Salsa
- Preheat oven to 350F.
- Cook ground beef until no longer pink.
- Drain fat.
- Add seasonings and water.
- Simmer for 5 minutes.
- Then add tomatoes and green pepper.
- Simmer an additional 5 minutes.
- In a greased 3.5 quart casserole dish, layer 1/2 of the tortilla chips, 1/2 of the meat mixture, 1/2 of the cheese.
- Repeat layers and dot the top with salsa.
- Bake for 20 minutes.
- Enjoy!
- It looks like a lot of ingredients, but it is because I chose to make my own taco seasoning.
- You may use a store-bought package if you choose.
- I just find this to be much healthier and tastier too!
