Healthy Beef and Mac
- 1 lb lean ground beef
- 12 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 1 cup hot water
- 2 cups almond milk (or your favorite milk)
- 1 12 cups macaroni
- 1 tablespoon arrowroot (or corn starch)
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon evaporated cane juice (or sugar)
- 12 teaspoon paprika
- 12 cup cheddar cheese, shredded
- In a large skillet brown the meat with the onion, bell pepper and celery.
- Drain off the fat.
- Add hot water and milk to the meat in the skillet.
- Mix the seasoning in a ziploc bag.
- Add the macaroni to the skillet.
- Add the seasonings to the skillet.
- Bring to a boil, cover and simmer on low for 12 - 20 minutes, until the macaroni is tender.
- When the noodles are tender, add the cheese, stir and cover for a minute or two until the cheese is melted.
- Remove from heat and let stand until it is to the sauciness/thickness you prefer.
