Southwest Cheesecake

  1. Crust:
  2. Heat oven to 325F (160C).
  3. Stir 1 1/2 cups finely crushed tortilla chips into 5 tbsp melted butter.
  4. Press into bottom of 9-inch spring form pan and bake for 15 minutes.
  5. Filling:
  6. Beat with mixer, 2 to 8 oz.
  7. pkgs of cream cheese, 2 eggs and seasonings.
  8. Add 2 cups of shredded cheddar cheese and 1 to 4 oz.
  9. can chopped green chilies, drained.
  10. Brown 1 lb.
  11. ground beef, drain.
  12. Mix with 1 can refried beans.
  13. Spread cream cheese mixture over baked crust.
  14. Spread ground beef mixture over cream cheese layer.
  15. Place pan back in oven for 30 minutes.
  16. Topping:
  17. Spread sour cream over baked cheesecake and refrigerate 3 hours.
  18. Top with chopped green onions, tomoatoes, red or yellow bell peppers, black olives, jalapeno peppers, optional and salsa.
  19. Unmold and serve.
