Guadalatuckey Beans
- 1 12 lbs chorizo sausage
- 1 onion, diced
- 12 head garlic, chopped
- 16 ounces chicken stock
- 12 teaspoon chili powder
- 1 teaspoon sea salt
- 2 teaspoons fresh ground pepper
- 14 teaspoon cayenne
- 15 ounces Bush's red beans (original)
- 1 cup extra-sharp cheddar cheese
- Take the chorizo out of its casing and sautee on high heat for 10 minutes, breaking up the pieces.
- When color starts to happen, add 1/s of chicken stock.
- Add onion, garlic, salt, pepper, chili powder 2000, and cayenne pepper.
- Bring to a boil and simmer uncovered for 25 minutes.
- Add beans and bring to a boil and let simmer another 10 minutes.
- The meat to bean ratio should be 2 to 1.
- Garnish with cheddar.
