Turkey And Quinoa Casserole

  1. Cook quinoa according to package directions.
  2. In a large deep skillet brown turkey over medium heat.
  3. Cook for about 4 minutes breaking meat apart and until no pink color shows.
  4. Set turkey aside.
  5. In same pan add the oil and flour.
  6. Whisk until incorporated and cook 2 minutes.
  7. Whisk in milk and raise heat to medium high.
  8. Continuously whisk until a smooth thick sauce is achieved.
  9. Add in all the spices.
  10. Lower heat to medium, stir in swiss cheese.
  11. Since I like fresh cheeses, I buy baby swiss from the deli counter at my grocers.
  12. Then I place all the slices on top of each other and cut them into thin slices.
  13. Stir in quinoa, turkey and vegetables.
  14. Mix well to combine.
  15. Now, you can make one large 9x13 dish or two 8x8 dishes.
  16. Use one now and freeze the other.
  17. I'm now making one large 9x13 dish.
  18. So in a 9x13 baking dish add the quinoa mixture.
  19. Bake at 350F fahrenheit for 20 minutes, covered.
  20. Then, uncover, sprinkle cheese on top and cook another 10 minutes.
  21. To freeze the smaller dish, once you add quinoa mixture into dish let it cool.
  22. You will not do the baking process yet.
  23. Once cooled, cover tightly and freeze.
  24. To cook, place dish from freezer into a cold oven.
  25. Turn oven on to the 350F.
  26. Lightly cover with tin foil.
  27. Bake 40 minutes.
  28. Uncover.
  29. Now add the shredded mozzarella and bake an additional 10 minutes.
  30. Let stand 5 minutes before serving.
