Peach Salad With Cumin Dressing

• 2 cups sliced frozen peaches, thawed
• 1 cup thinly sliced seeded peeled cucumber
• 12 teaspoon grated lemon zest
• 1 tablespoon fresh lemon juice
• 2 teaspoons minced of fresh mint
• 2 teaspoons honey
• 34 teaspoon cumin seed, toasted and crushed
• 12 teaspoon salt
• 14 teaspoon fresh ground black pepper
• 12 cup fresh raspberry

1. Combine first six ingredients in a bowl, tossing gently.
2. Combine cumin, salt, and pepper; sprinkle over peach mixture.
3. Add raspberries, and toss gently to combine.
4. Serve immediately.
