Athenia Fish
- 4 Tilapia fillets
- 1/4 tsp Pepper
- 1 tsp Greek seasoning
- 1 tbsp Olive oil
- 1 tbsp Minced garlic
- 1/4 cup Diced onions
- 1 can Artichoke hearts (drained)
- 1 can Diced tomatoes (drained)
- 1/4 cup White wine
- Preheat large saucepan.
- Season both sides of fish with 1/2 tsp.
- Greek seasoning and pepper.
- Place oil in pan, then add garlic and onions; cook and stir 1-2 minutes or onions are slightly softened.
- Add fish filets and top with remaining ingredients.
- Cover and cook 8-10 minutes, stirring vegetables once.
