Garlic-Lime Spinach
- 2 tablespoons olive oil
- 3 cloves garlic, smashed
- Two 6-ounce bags fresh spinach
- 1/2 teaspoon lime zest
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- In a large Dutch oven, heat the oil over medium-high heat until hot.
- Add the garlic and cook until golden brown, about 2 minutes.
- Add the spinach and cook, stirring constantly until wilted, about 4 minutes.
- Stir in the lime zest, salt and pepper.
- Serve immediately.
