Brown Fried RiceHey, it is Still Good!
- 2 tablespoons peanut oil
- 1/4 pound sliced white button mushrooms or one 4-ounce can sliced mushrooms, rinsed and drained
- 2 1/2 cups cooked brown rice
- 2 tablespoons soy sauce
- 1 large egg, beaten
- 6 slices bacon, crisp cooked and finely crumbled
- 2 green onions, trimmed and finely chopped
- Preheat a large nonstick skillet over high heat.
- Add the oil, then the mushrooms.
- Stir-fry until limp, about 1 minute.
- Add the rice and soy sauce and stir-fry until the grains of rice have separated and coated, about 30 seconds.
- Push the mushrooms and rice to the side of the pan with a wooden spoon or paddle.
- Add the egg and scramble for 30 seconds.
- Stir to break up the rice, and mix the contents of the pan together.
- Stir in the bacon and green onions, and stir-fry for 30 seconds to 1 minute more to heat through.
