Waldorf Salad Drop Cookies Recipe
- 2 3/4 c. flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 c. firmly packed light brown sugar
- 3/4 c. real mayonnaise
- 2 lg. Large eggs
- 1 teaspoon vanilla
- 1 1/2 c. coarsely minced unpeeled red apple
- 1 c. coarsely minced walnuts
- 1/4 c. finely minced celery
- In a medium bowl, stir together the flour, baking soda, salt, and cinnamon.
- In the large bowl of an electric mixer at medium speed, beat together the sugar, mayonnaise, Large eggs, and vanilla till smooth.
- Add in flour mix and at low speed, beat till smooth.
- Stir in the apple, walnuts, and celery.
- Drop by level tablespoonfuls 2 inches apart on ungreased cookie sheets.
- Bake in a preheated 350 degree oven till lightly browned, 10 to 12 min.
- With a wide spatula, remove to a wire rack to cold completely.
- Store in a tightly covered container.
