Greek Cheesy Goodness: Grilled Halloumi

  1. Saute mushrooms with the butter on medium high heat, about 6 minutes.
  2. Meanwhile, turn your grill on and cut halloumi into slices about 1 inch thick.
  3. Once the mushrooms have slightly browned, add the wine and olives.
  4. Saute for another 4 mins or so until olives are warmed and the wine has evaporated.
  5. Put cheese slices on the grill.
  6. These should take about 5 minutes or so on each side to get nice and soft.
  7. Serve mushrooms and olive mixture atop hot grilled halloumi.
  8. Sprinkle fresh chive for garnish.
