Greek Cheesy Goodness: Grilled Halloumi
- 4 ounces, weight Mushrooms
- 1 Tablespoon Butter
- 4 ounces, weight Halloumi Cheese
- 2 Tablespoons White Or Red Wine
- 2 ounces, weight Greek Olives (A Combination Of Green And Kalamata Olives)
- Saute mushrooms with the butter on medium high heat, about 6 minutes.
- Meanwhile, turn your grill on and cut halloumi into slices about 1 inch thick.
- Once the mushrooms have slightly browned, add the wine and olives.
- Saute for another 4 mins or so until olives are warmed and the wine has evaporated.
- Put cheese slices on the grill.
- These should take about 5 minutes or so on each side to get nice and soft.
- Serve mushrooms and olive mixture atop hot grilled halloumi.
- Sprinkle fresh chive for garnish.
