Moo Ping (Thai-style Barbecued Pork)
- 1 pound, 1-23 ounces, weight Pork (meat With Little Fat Is The Best Choice For This Dish)
- 5 cloves Garlic
- 2 sprigs Cilantro
- 1 teaspoon Coriander (ground)
- 5 Tablespoons Oyster Sauce
- 2 Tablespoons Fish Sauce
- 2 Tablespoons Sugar
- 2 teaspoons Ground Pepper
- Prepare the marinade: crush the garlic with the cilantro and coriander in a mortar pestle.
- Mix the oyster and fish sauces together in a small bowl, then add the garlic mixture.
- Mix in the sugar and pepper.
- Prepare the pork: slice the pork (from loin is best) into thin pieces about 2 inches square.
- Place pork into the marinade and let it sit for 1+ hours in the fridge.
- Remove the pork from the marinade.
- Skewer the pork onto bamboo (soaked in water) or metal skewers and grill over medium heat until meat is nicely browned and juices run clear.
- You can also broil the pork in the oven until meat is nicely browned and juices run clear.
