German Pork and Kraut Soup

  1. In a large saucepan, cook bacon over moderate heat until crisp.
  2. Remove bacon, reserving drippings.
  3. Drain the bacon on paper towels; set aside.
  4. Add the pork, onion, and garlic to reserved drippings.
  5. Cook over moderate heat until pork is browned and onion is tender.
  6. Add the sauerkraut, potatoes, broth, beer, juniper berries (if using), bay leaves, paprika, fennel seeds, caraway seeds, and pepper.
  7. Bring to a boil.
  8. Lower the heat and simmer, covered, for 1 hour or until pork is tender.
  9. Discard the bay leaves and juniper berries.
  10. Serve soup with sour cream and bacon pieces.
  11. Makes 4 main dish servings.
