Fenwick Island Fish Patties
- 1 lb fresh mild white fish, cooked (grouper, flounder, redfish, sea bass, snook or other)
- 1 small onion, finely minced
- 14 cup combined red and green bell pepper, finely minced
- 1 egg, beaten
- 2 tablespoons whole mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon cajun seasoning (or more to taste)
- 1 teaspoon sherry pepper sauce (Outerbridge's) or 1 teaspoon Worcestershire sauce
- 12 cup seasoned bread crumbs
- 2 tablespoons chopped fresh parsley
- salt and pepper
- Cut cooked fish into pieces and place in a food processor.
- Process quickly to shred and place shredded fish into a large bowl.
- Add onion, bell peppers, egg, mayonnaise, lemon juice and zest; toss gently to blend.
- Season with Cajun seasoning, Outerbridge's or Worcestershire sauce, seasoned breadcrumbs and parsley and toss once more.
- Add salt and pepper to taste.
- Form mixture into 8 patties and place on a foil-lined baking pan.
- (Fish patties may be refrigerated at this point).
- When ready to cook, preheat oven to 400 degrees F. Spray patties with vegetable cooking spray and bake for 15 minutes or until browned.
- These are great served with lemon slices and your favorite tartar sauce.
