Fenwick Island Fish Patties

  1. Cut cooked fish into pieces and place in a food processor.
  2. Process quickly to shred and place shredded fish into a large bowl.
  3. Add onion, bell peppers, egg, mayonnaise, lemon juice and zest; toss gently to blend.
  4. Season with Cajun seasoning, Outerbridge's or Worcestershire sauce, seasoned breadcrumbs and parsley and toss once more.
  5. Add salt and pepper to taste.
  6. Form mixture into 8 patties and place on a foil-lined baking pan.
  7. (Fish patties may be refrigerated at this point).
  8. When ready to cook, preheat oven to 400 degrees F. Spray patties with vegetable cooking spray and bake for 15 minutes or until browned.
  9. These are great served with lemon slices and your favorite tartar sauce.
