Chewy Molasses Spice Cookies
- 1 stick butter, unsalted
- 1 cup brown sugar, light packed
- 1/2 cup sugar plus extra for rolling
- 2 large eggs
- 1/2 cup molasses
- 2 tablespoons vegetable oil
- 2 cups flour, all-purpose
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger ground
- 1 teaspoon allspice ground
- 1/2 teaspoon salt
- Preheat oven to 325 degree F.
- Cream butter and sugars until light and fluffy, about 3 minutes.
- Mix in eggs followed by molasses and oil.
- In separate bowl combine dry ingredients and slowly add to the butter mixture.
- Place batter in fridge for one hour for the dough to thicken.
- Once the dough is firm enough, roll tablespoon-sized balls in sugar and place on baking sheet 2 inches apart.
- If the dough is still too runny, just scoop onto the baking sheet and sprinkle with sugar.
- Bake 15 to 17 minutes, cool for 10.
